Leafy green vegetables contain two important natural carotenoid pigments called lutein and zeaxanthin — which have been identified by scientists to help in protecting the lens and retina of the eye. These pigments concentrate in the eyes when leafy vegetables are eaten regularly. Lutein and zeaxanthin accumulate in large quantity in the eye lens than in the macular, thus creating a barrier against developing cataract particularly.
